Ingredients:
- 2 fresh ripe mangoes, peeled, pitted and diced
- 1/2 red pepper, seeded and diced
- 1/2 sweet onion diced
- 2 garlic cloves minced
- 2 tablespoons fresh lime juice
- 2 tablespoons fresh coriander, chopped
Directions:
- To medium-sized bowl, add mangoes, red pepper, sweet onion and garlic.
- Stir in lime juice and coriander.
- Cover and let sit for 45 minutes to an hour for flavours to meld. This mango salsa recipe will keep well in refrigerator for up to 2 days.
