Mango Fresh Fruit Salsa with Red Pepper

This easy recipe takes less than 20 minutes to prepare and is delicious with barbecued or grilled chicken, shrimp and pork.

Ingredients:

  • 2 fresh ripe mangoes, peeled, pitted and diced
  • 1/2 red pepper, seeded and diced
  • 1/2 sweet onion diced
  • 2 garlic cloves minced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh coriander, chopped

Directions:

  1. To medium-sized bowl, add mangoes, red pepper, sweet onion and garlic.
  2. Stir in lime juice and coriander.
  3. Cover and let sit for 45 minutes to an hour for flavours to meld. This mango salsa recipe will keep well in refrigerator for up to 2 days.

Fresh Peach Salsa Recipe

This recipe takes a bit longer to make as peaches can be difficult to peel. An easy technique is to drop peaches in boiling water and let them sit for up to a minute. Remove carefully then let sit in ice cold water for another minute. The peach peel will then be easier to remove.

Ingredients :

  • 2 fresh ripe peaches, peeled, pitted and diced
  • ½ sweet red pepper diced
  • two green onions, sliced
  • one garlic clove minced
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons vegetable oil
  • 1/4 teaspoon chili flakes

Directions:

  1. In a medium sized bowl, mix peaches, red pepper, green onions and garlic together.
  2. Add fresh lemon juice, vegetable oil and chili flakes and stir together well.
  3. Cover and let sit for 45 minutes to an hour to let flavors meld. This peach salsa tastes best served slightly cool or at room temperature. It will keep in the refrigerator for up to two days.

  • 3 fresh ripe plums, peeled and pitted
  • 2 tablespoons shallots, diced
